MURRAY, Ky. – Tuesday was the first day back to school for students at a local university. Murray State faculty and staff have been working hard over the summer to accommodate a steep increase in students who want to live on campus. Murray State staff welcomed students Tuesday morning to help answer any questions.

Murray State’s College of Education Dean David Whaley said they are trying to capitalize on the energy students and faculty have the beginning of the semester.

Whaley said, “If students feel welcome as they come into the building, they’re going to have a better day. What better way to welcome them than to reach out and help direct them to classes, but also make sure they have a cup of coffee, water, or granola bar.”


Even with those snacks, rumbling stomachs can still be a problem for students. But thanks to a new addition to the Racer family, stopping for a meal is now a lot easier.

It is convenient, quick and cheap. It is a fully, loaded cafeteria on wheels. It is called the Pony Express food truck. Murray state is the only university in Kentucky to own and operate a food truck. Students like Kayla Lawrence are taking full advantage of it.

“It is really convenient, especially in the chemistry building because the closest food is all the way on the other side of campus,” said Lawrence.

Murray State Dining Director Paula Amols said this will help students who commute.

“They can come right to the truck, they can use their meal plan money right there so it’s convenient for them. It’s wrapped and easy to walk away with. It’s bringing the service to a new level for our students,” said Amols.

Lawrence said the Pony Express truck offers comfort food in more ways than one. “It takes the stress out of trying to find somewhere to eat and where you’re supposed to go if the truck is right out here,” said Lawrence.

The Pony Express food truck offers breakfast, lunch and a late night menu and is open Monday through Saturday.
